Foodie Penpals – January

As you might remember I participate in a fabulous program called the “Foodie Penpal” program put together by the lovely Lindsay at The Lean Green Bean.  After you sign up {here}, you are randomly matched up with someone to send a package to and another person that will send you a package!  After contacting your person, you put together $15 worth of food yummies {can be anything from local classics, to favorite snacks, to homemade goodies}, package it all up and send it their way!  Then for the bloggers in the world, on the 1st of each month you post about your packages {both the package you received and the package you put together}.  What a fun way to connect with other foodies across the country!

My foodie penpal this month was Allison.  Even while dealing with the yucky flu she put together a fabulous box of goodies to send my way.  The first thing to get snatched up was a bag of gluten free pasta {snatched up so fast in fact…i forgot to take a picture of it!}  We eat a LOT of gluten free pasta in my house so this one totally hit the spot.  She also included a can of Wolfgang soup, {which is the perfect on the go healthy ORGANIC meal}  some delicious gluten free crackers and a yummy fruit bar.  Huge thanks to Allison for such a great Foodie box.  Can’t wait for next month’s match-up!!

Monday Mantra: things

Happy Monday to you!  Hope you had a lovely weekend.  Ours was a busy one filled with cleaning out, celebrating soon to arrive sweet baby boys {and their very patient momma} and trying to get a hold of the crazy mess that has become my house lately!!  Time to look forward to a fun and productive week.  Try to take the time to notice things around you and appreciate all of the blessings in your life.

It’s time to SKI!!

One of my most favorite types of vacations is skiing!!  It is such a cool experience to be on top of a giant mountain, covered with snow with nothing but beautiful nature around you {and then hauling butt down that mountain…and trying not to fall!}  We look forward to planning a ski trip {almost} every year if we can…in fact we got engaged on one!!  {the boy did it right…gorgeous mountains in the background…such an amazingly sweet surprise!}  This year {boo} we will not be heading out west and i’m having snow withdraws!!  So in an attempt to soothe my no-ski troubles I have for you a little ski resort decor inspiration.  So snuggle up and enjoy!!

I stumbled on this fabulous blog {Enjoying the Small Things} a few months ago and was so taken by this woman’s honesty and strength that i found myself reading back to almost the beginning.  I have totally  fallen in love with her sweet little girl {& the rest of her fabulous family}.  Her daughter Nella is approaching quite a milestone and its time to celebrate!!!  Please check out her post!!

Monday Mantra: signs

Happy Monday to you.  Here in Atlanta it is rainy and overcast…the kind of day that all you want to do is curl up under a blanket {with your pup} and read a good book!  We had a lovely {and exhausting} weekend hanging out in the wilderness.  After what felt like a FOREVER hike out from our little campsite in the mountains, I feel refreshed and energized from some time hanging with good friends, enjoying fresh air and getting quite a workout!!  If you have never backpacked before I highly recommend it {just be prepared to be sore!!}  The most amazing thing about taking these little trips is the second you pull yourself away from the craziness of life and put away all the technology you are “forced” to just listen.  To listen to the breeze through the trees, the rushing of the nearby creek and the sound of a crackling campfire.  So fantastic!!

Girl Gatherings: Pinterest Party

This may or may not be a post that was meant to be published a LONG time ago {don’t judge…it fell off my radar and got lost in cyberspace}.

I’ve mentioned before {here} that me and my favorite ladies love to plan “girl gatherings” as a scheduled excuse to get together and catch up.  Well this super special gathering not only is the perfect opportunity to get together with the ladies…its a NO more excuses party to actually do some of the crafts on your Pinterest page {come on…you know you have like 1 million things that you’ve pinned with the intention to do someday…and then never touch}

It’s easy…pick a place and a date…scan over your pin boards for a few things that you really want to try {and would be fairly easy to transport to someone else’s house} and DO IT!  For this particular Pinterest Party we gathered at the lovely Maren Claire’s casa to get ON it already.  We all broght a few projects to tackle…and of course a little vino and munchies {what’s a good party without wine and munchies?!?}  It was a smashing success!!  There were old t-shirts being made into pillows and cute tank tops, fabulous tutus made from loads of tulle {from the lovely Craft Mayo}, scrabble coasters, lightbulbs turned into cute decorative fruit, and even a diaper cake motorcycle for an upcoming baby shower!!  How productive!?!?  All while enjoying good food, fabulous conversation and the best friends a girl could ask for!!

Yummo – Spicy Chicken Chili

There is nothing more satisfying then a nice warm bowl of chili on a cold day.  I do make a mean bowl of “Monroe’s semi-sissy chili” but that’s a recipe for another day!!  Today’s warming bowl of loveliness has a bit of a mexican twist to it.  Its healthy {really just good for you chicken and beans}, easy and inexpensive to make!!  Its a win…win…win!  I tend to just throw stuff randomly in the crock-pot and hope for the best, and usually something yummy comes out.  This one did NOT disappoint.  It’s super simple ingredients that come together for something that is satisfying and sticks with you.  You might be shocked here…but i added a bit of greek yogurt in the end to thicken it all up and balance out the spicy flavors.  Enjoy!

Spicy Chicken Chili

Ingredients

  • 1 package organic chicken breasts
  • 1 can chick peas
  • 1 can red kidney beans
  • water or broth
  • 1 package Frontera skillet sauce {I used the classic Fajita}
  • cayenne pepper {to taste}
  • garlic powder {to taste}
  • greek yogurt

Directions

  • Place chicken breasts at the bottom of the crockpot, cover with skillet sauce {add a splash of water if the chicken isn’t covered}.  Cook on high for 2 hours or until chicken can be shredded.
  • Add cans of beans, additional seasoning {if desired} and enough water/broth to cover beans and chicken.  Cook an additional 2 hours.
  • Stir in a full scoop of greek yogurt, until you reach desired consistency {we were going for thick chili/stew like so i kept it nice and thick}
  • Serve with additional greek yogurt and cilantro, maybe even a squeeze of lime.

* Cooking times vary.  Beans can be added earlier if desired {just makes shredding the chicken a bit more challenging}  Substitute your favorite beans, vegetables, etc to customize this!
