5 Things Fall – Jillian’s Favorites

I think its pretty safe to say that my Favorite season is Fall.  There is just something so lovely about the cool crisp air {which is a HUGE relief from the crazy humid summers in the A-T-L}, the warm snuggly clothes, watching FOOTBALL, enjoying the autumn smells and digging into some of my favorite foods {did someone say Pumpkin flavored…anything!}  So here are 5 of probably 1 million reasons why I ♥ Fall…it’s just so wonderful!

#1 Bringing the outside in {Fall Decor & yummy smelling candles}

I love love love using natural things as decor {they don’t call me Evil Twiggy for nothing}!  There are so many beautiful things to choose from in the fall; acorns, leaves, gourds and pinecones.  A grouping of pumpkins by the front door, a wreath of autumn colored leaves, a pile of acorns at the bottom of a hurricane or a basket full of sweet smelling pinecones…I just can’t get enough!  And to top it all off the smells of fall are the BEST!! Oh how i love a pumpkin or apple or fall leaves candle.  Its hard to beat walking into a room that is just filled with one of those delightful scents!!  My favorite find this year is a Harry & David Crisp Mountain Apple candle {that I scored at a serious discount at TJ Maxx}  It literally smells like warm apple crisp mixed with fresh mountain air!  So delightful.  I am trying my hardest to burn it in small doses so i can make it last F-O-R-ever, but resisting the urge to burn it 24 / 7 is very challenging!

#2 Anything pumpkin-y

I could eat pumpkin flavored anything…anytime of the year.  So technically its not just a fall thing for me, but this time of year its everywhere!!!  I love the smell…the taste…the texture…I love it all!  My next attempt at something yummy and pumpkiny will be these Paleo Pumpkin Bars {gluten free and hopefully delicious!!}

#3 Changing leaves

Here in Georgia we have the most beautiful fall season!  The weather is crisp with a chill in the air.  The leaves change to the most beautiful colors.  Its just lovely!  Time to keep the doors and windows open, get outside to play and enjoy the beauty!

#4 Scarves

For those who know me {or happened to read this}…this is sort of a DUH.  I’m a scarf girl.  The second its not 500 degrees outside i’m sporting some sort of scarf.  I just love them.  But i especially love them on a crisp fall day.  They bring such warmth and snuggly-ness to an outfit.  I have a few scarves…just a few.

#5 Soup

There is something so warming and filling and yummy about a nice warm bowl of soup.  And for someone like me that does NOT like to spend alot of time cooking {i like to cook…just not for hours and hours at a time} soup is an easy, healthy option!  Check out my Roasted Red Pepper Soup and Smokey Southwestern Soup.  This time of year I have lots of homemade soup in the freezer just waiting to be enjoyed on a cool day!!

Monday Mantra: gratitude

Although its tough to come back to reality on monday mornings, I am grateful for a weekend filled with love, friendship and realizations.  We celebrated newlyweds, soon to be parents, new home owners and sweet baby girls {I stole as many snuggles from my sweet niece as humanly possible}.  I also feel like i’m getting closer to understanding what makes my body {specifically my digestion} “tick”.  I’ve {unfortunately} determined that I cannot eat shellfish and starting today I’m officially going to try to be gluten free for a while.  I have struggled with unusual symptoms for years and am forever trying to get to the bottom of what my body is trying to tell me.  So fingers crossed this might just do the trick {and prayers please that I can make this change}  So on this icky lovely monday I am grateful for so much and hopeful for the future.

Full Life

A professor stood before his philosophy class and had some items in front of him. When the class began, he wordlessly picked up a very large and empty mayonnaise jar and proceeded to fill it with golf balls. He then asked the students if the jar was full. They agreed that it was.


The professor then picked up a box of pebbles and poured them into the jar. He shook the jar lightly. The pebbles rolled into the open areas between the golf balls. He then asked the students again if the jar was full. They agreed it was.

The professor next picked up a box of sand and poured it into the jar. Of course, the sand filled up everything else. He asked once more if the jar was full.. The students responded with a unanimous ‘yes.

The professor then produced two Beers from under the table and poured the entire contents into the jar effectively filling the empty space between the sand.The students laughed…

Now, said the professor as the laughter subsided, I want you to recognize that this jar represents your life. The golf balls are the important things…your family, your children, your health, your friends and your favorite passions.  If everything else was lost and only they remained, your life would still be full. The pebbles are the other things that matter like your job, your house and your car.. The sand is everything else, the small stuff.

If you put the sand into the jar first, he continued, there is no room for the pebbles or the golf balls. The same goes for life.  If you spend all your time and energy on the small stuff you will never have room for the things that are important to you.  Pay attention to the things that are critical to your happiness.

Spend time with your children. Spend time with your parents. Visit with grandparents. Take your spouse out to dinner. Play another 18. There will always be time to clean the house and mow the lawn.

Take care of the golf balls first…the things that really matter. Set your priorities. The rest is just sand.

One of the students raised her hand and inquired what the Beer represented. The professor smiled and said, I’m glad you asked.  The Beer just shows you that no matter how full your life may seem, there’s always room for a couple of beers with a friend.

On trend: Dip Dyed

One of my current design trend favs is all things Dip Dyed!  {originally featured on the lovely Burlap+Blue}  The idea of the Dip Dyed detail is basically giving something the look like it was literally dipped into an accent color.  From furniture and accessories to fabrics and clothing Dip Dyed is a fun way to add a pop of color to almost anything!  The great thing about this trend is not only can you find new items with a fabulous little detail you can easily add a little pop to something you already own!  Add a detail to the legs of a chair or table, update a simple pair of curtains or even add a little punch to some of your favorite kitchen wares!

I don’t know about you but I think I NEED to add a some Dip Dyed flair to a basket right now!!  So if you are looking for a little something you can do to spruce up your home, try adding a little Dip Dyed into your life!

Roasted Butternut Squash – {Recipe Redux}

I was recently accepted as a contributor for the fabulous group Recipe Redux.  An online recipe challenge founded by registered dietitians that is focused on creating healthy, good for you dishes that are delicious.  Sometimes this means coming up with new healthy recipes and sometimes it means recreating some of our favorite yummy dishes by making them better for you {but still tasty}.

This month’s challenge was to share a fall favorite highlighting some of this season’s most deliciously orange foods.  We are talking foods like pumpkin, squash, carrots or sweet potatoes.  Not only do these brilliantly orange foods taste like fall, they are packed with antioxidants that do a body good!  I spent some time considering recipes that I might want to share when it hit me.  One of my FAVORITE dishes this time of year {made by my sweet sister-in-law} is this super yummy {and easy to make} butternut squash dish.  She makes it for our thanksgiving celebration every year and it is D-E-L-icious!  Now in true HSE form…I changed up a few things.  I used coconut oil rather then olive oil {cuz i just really LOVE the stuff, and i don’t like to use olive oil when cooking at high temperatures because of its instability}  I also traded out the pecans for walnuts…because thats what i had in my pantry!  Not only is this dish easy and inexpensive to make, it is so yummy and full of good for you vitamins and antioxidants.  {great as left overs too!}

Roasted Butternut Squash w/ Rosemary, Pecans & Gorgonzola
Makes: 4-6 servings

Ingredients

  • 1 medium butternut squash
  • 1 tbsp coconut oil
  • 1-2 tsp fresh rosemary
  • salt & fresh ground pepper
  • 1/2 cup walnuts {coarsely chopped} {can also use pecans}
  • 1/3 cup gorgonzola cheese {feta would also be lovely}

Directions

  1. Preheat oven to 400°.  Cut the stem & blossom ends off squash, then cut in half lengthwise.  Scrape out seeds with a spoon, peel squash with a vegetable peeler, and cut into 1″ cubes.
  2. Wash fresh rosemary and finely chop. Toss with squash and salt & pepper.
  3. Brush baking sheet with coconut oil and arrange squash in a single layer; Roast 20 min.
  4. Remove from oven, flip squash and roast an additional 15 min.
  5. Sprinkle walnuts over the top and roast an additional 10-15 min.
  6. Remove squash from the oven, in a bowl combine squash mixture with cheese and additional salt & pepper as needed.
  7. Enjoy!

A little birdy told me…

Monday Mantra: Miles

Happy Monday to ya.  Hope the weekend treated you well.  We are L-o-V-ing the gorgeous fall weather here in Atlanta {please stick around…forever}.  Watching football, doors & windows open, enjoying a warm cup of tea = the perfect sunday afternoon!!  I also had a super fun Saturday catching up with some of my favorite ladies at our Holiday Pinterest Party!!  Stay tuned for pics and details from this fabulous crafting party!!  How was your weekend?  Did you make the most of it?  Have a fabulous week and enjoy today’s mantra…
