Funny story. I’m taking you back…way back. Picture if you will: Georgia Southern University, a young little freshman in college, Jillian, has just started dating this handsome young man named Jeremy. As one of our first stay at home dates we decide to cook breakfast for dinner. Pancakes, eggs, bacon, grits…the whole shebang. I was put in charge of the bacon {this was back before my no meat days}.
Now before i finish this little story let me tell you a little bit about the apartment Jeremy was living in…or more specifically the state of the kitchen. It was a boy’s college apartment…need i say more?! I’m not saying that my love is a messy guy…but when you put 3 or 4 guys in college together…you aren’t going to get a spic and span kitchen /*-#~\ Anyway…I admittedly did not know much about cooking back then and I was a bit nervous to be cooking with my new beau so what better way to make the bacon but to microwave it…can’t screw that up…right?! So away i went getting the plate of bacon ready to pop in the microwave. As previously stated the kitchen wasn’t exactly in tip top shape and clean plates weren’t always at the ready. So this new little chef grabbed a clean disposable plate, layered up the bacon and popped it in. The microwave beeped letting us know that the final {and in the boy’s eyes the best} part of the meal was ready to enjoy. Well much to my surprise when i opened up the microwave the plate was no where to be found…just a pile of crispy bacon!?!?! WHAT?!?! Well smart little college girl had put the entire pack of bacon on a styrofoam plate. Styrofoam plate + microwave + entire pack of bacon = EPIC FAIL. Somehow the boy found it in him to look past this GIANT mis-calculation on my part and we survived to tell the tale.

So these days we do our breakfast a little different…pancakes are usually from scratch or from a whole wheat or buckwheat mix {Jeremy is officially the pancake maker in our house…what can I say…I’m a lucky girl}. We always add fresh berries like blueberries, strawberries or blackberries and I make a fresh berry compote for the topping {instead of using a sugary syrup}. We still usually cook up a little bacon for the boy {cooking it in the broiler to get nice crispy bacon without all the greasy mess}, scramble a few eggs and maybe a little bit of toast or cream of wheat for good measure. Breakfast for dinner is still one of our favorite meals and without fail one of us always makes a crack about our original breakfast for dinner adventure. Quite a start to our loving relationship wasn’t it!

Berry Compote
- Fresh or Frozen berries of your choice
Put berries on small pot on stove top, cook at medium heat until the berries cook down and become a little bit liquid-y and lovely. Pretty straight forward.

I love breakfast for dinner! Too funny about the styrofoam plate! I have a funny microwave story. When I was about 7 yrs old, I wanted to be nice and cook dinner for my mom. I put a POT of noodles in the microwave. Let’s just say I saw a nice firewords display and mom had to promptly buy a new pot and microwave. Lesson learned!

…and I’m sure the bacon ended up in the bushes under the deck which seemed to have a larger appetite (and could hide) more food than the plant on Little Shop of Horrors…HA!
